Roma tomatoes are not only relatively inexpensive and available year round but are also firm fleshed, hearty in flavor and super rich and sweet when roasted. Heat grill on medium heat. Halve tomatoes (long ways) and place in ziptop bag. Add the rest of the ingredients to bag and give a nice shake to mix dressing as well as coat tomatoes. Let rest on counter at room temperature for 10 minutes then flip bag and let sit until grill is heated. Arrange tomatoes on strip of foil cut side up, and place either on "top warming rack" or turn off heat to half of grill and place on that side. Close lid and cook for 45 minutes or until most of the water has cooked out and they have deepened in color. They should look leathery, glistening, and slightly charred. Top with extra Whiskey Oak Steak Seasoning just before serving. NOTE: Do not put fresh tomatoes in refrigerator or they will lose their flavor. Leave them at room temp. After cooking they can be refrigerated.
