Whiskey Oak Smoked Sugar Glazed Carrots

Sweet baby carrots pick up a hint of smokiness and a beautiful brown glaze in this side dish.

1 lb Baby Carrots

1/4 cup Water

2 tbsp Whiskey Oak Smoked Sugar

1 tsp Whiskey Oak Smoked Salt

1 tbsp Lemon Juice

1 tbsp Butter

1/2 tsp Baking Soda

fresh ground black pepper - to taste


1Add water to medium skillet and heat to a simmer.

2Add smoked sugar, smoked salt, and lemon juice and let simmer until smoked sugar and smoked salt are dissolved.

3Add carrots and butter then cover and cook over med-low heat for about 5 minutes, or until carrots are just slightly soft when pierced with fork.

4Uncover pan and crank heat back up to med-high to simmer sauce until reduced by half.

5Grind on pepper and add the baking soda (sauce will bubble) and keep tossing/turning carrots until sauce is golden brown, caramelized and delicious.

Baking soda is the secret ingredient. It will bubble up the glaze and form a shockingly crisp and brown "candy" on the carrots.
